In human organisms, the natural biological molecules known as lipids derive
their physiological meaning from their functions. Lipids are water-insoluble but
are soluble in organic solvents that are non-polar.
They include fats and oils which, at room temperature, differ in their physical
state: fats are solid, while oils are liquid.
Fatty acids
Fatty acids are the building blocks for most lipids. Fatty acids can be
saturated or unsaturated and therefore form different types of lipids:

- Monounsaturated fatty acids
- Polyunsaturated fatty acids
