EXECUTIVE SUMMARY

Introduction

In recent years, order food through delivery apps has become more and more popular, especially in urban areas. Although we can’t deny the convenience of ordering food online, but this trend can lead to some serious environmental problems. For a typical order, milk tea for example, coming with the good will be plastic bag, plastic straw, plastic cup and so on. This is an alarming problem for the environment since more and more people prefer ordering food online.

This report outlines the results of our team’s survey carried out to determine the habit of using food delivery services in Hanoi. The survey was conducted in autumn 2019 during the months of October and November. 51 random people were received an invitation (through Messenger app) to participate in this online survey. Participation was voluntary, the survey was implemented online, and respondents were ensured confidentiality.

This survey was developed by a group of BBAE students which is one of the three steps created to gradually change the way restaurants use packaging, from plastic and Styrofoam boxes to friendly environmentally packaging such as Styrofoam box made from bagasse or grass straw. The target age sample is from 17 to 30 years old including 3 groups:

  • Group 1 - College student and young adults: This is a popular demographic for meal delivery services, as college students and young adults live fast paced lives. With classes, active social lives and new careers, there is little to no time to think about what to make for dinner, let alone buy groceries.

  • Group 2 - Working professionals: Working professionals are often busy and overwhelmed but having a meal kit delivery service takes the guesswork out of planning and making dinner. After a long day at the office, what could be better than that?

+Group 3 - People who live alone: They don’t have to cook big meals so it’s convenient for them to just order food and have it delivered to their doorstep.

Methodology

The survey used both quantitative and qualitative methodology. This research paper is all based on the primary data and for its completion of the requirement of the stated objectives of this research paper are collected by the primary online survey through well structure questionnaire over the online food delivery and cover all sampling with 52 responses.

The survey consisted of 10 single-choice questions, 2 multiple-choice questions and 1 open- ended questions that the respondents had to write a short answer. The aim was to conduct the survey with people from 17 to 30 years old. Participants were asked to answer questions about their habit on

waste. It seems that restaurants just want to maximize the profit and don’t care about protecting the environment. This is the reason why we conduct this survey to find out the customers’ perceptions and knowledge of food ordering which influences their buying decisions and analyse what channel is used more frequently in food ordering.

3. OBJECTIVES

Since food delivery service market in Vietnam is growing and Vietnam has a high rate of Internet users and a dining-out culture. This trend can lead to some serious environmental problems. Therefore, the survey was developed by a group of BBAE students which is one of the three steps created to gradually change the way restaurants use packaging, from plastic and Styrofoam boxes to friendly environmentally packaging such as Styrofoam box made from bagasse or grass straw.

  • Step 1: Conduct survey about the habit of using food delivery service in Hanoi.

  • Step 2: Using the results to raise people awareness about the increase in waste when they use food delivery services.

  • Step 3: From the crowd effect, change the restaurant.

4. METHODOLOGY

The survey used both quantitative and qualitative methodology. The proportion of female participants is highest (69%), follow up is male with 23% and finally other genders with 8%. This proves that women are more interested in food delivery services and this is a potential target for our team to focus more.

Overall, the proportion of participants aged 18-22 is highest (73.1%). The oldest age group has smaller percentage (17.3%). Only 3.8% of 22-to-26-year-olds join in survey, compared to 5.8% of the younger people (14-to-17-years-old). Based on the figure, participants who aged 18-22 (college student) are interested in using food delivery app. With classes, active social lives and new careers, they will order food because it’s no time for them to think about what to make for dinner, let alone buy groceries. This is also the target age-specific customers that the group has been and will want to survet

5.3. How many meals do you have a day?

There is a high percentage in number of people who has 1-2 meals per day and 3-4 meals per day, 17.3% and 78.8% respectively. With the given number, we can see the frequency and the eating habit of youngsters. It can be breakfast, lunch and dinner. This is also the time whether they have meal at home, eat out or order

There are two main reasons which has more than a half of selection: no need to travel (76.9%), no need to cook and clean (51.9%). Other reason for ordering: Useful in bad weather (42.3%), Enjoy at home/school/workspace (46.2%), Promotions (44.2%), Easy to order (34.6%).

It is undeniable that there are many benefits from using ordering apps: convenience, smoother transactions and more precise delivery information. Food delivery apps are changing the overall customers’ experience with food service. It’s not wrong to say these apps are boosting both sides of the food service equation (restaurants and customer).

On the other hand, societal issues like packaging (plastic bags, straws,…) which is unable to degrade is being ignored. In another word, people are only interested in short-term benefits that they temporarily neglect the long-term harm. In the long run, food delivery doesn’t make any of our problems better, but probably contributes more to our ills than any of us would like to admit. The toxic from plastic thrown out in the land, oceans… will destroy people’s lives.

5.8. What kind of food do you order for food delivery?

With the given number, we find out that milk tea shops, Vietnamese food and Fast food restaurants have the large number of users. As a result, they make up higher proportion of plastic. These shops and restaurants will become the main target when we find solution to change the way restaurants use packaging from plastic and Styrofoam boxes.

The chart shows the amount of money youngsters are willing to pay for ordering food. The proportion of people spend lower than 50,000 VND is 34.6%. Nearly a half of participants (23 people) pay 50,001 to 70,000 VND for this service. A smaller number of people will pay more than 70. VND to use food delivery apps.

According to the highest proportion of age group which is 18 to 22 years old, these figures are reasonable. People in this group don’t spend too much money (no more than 70,000 VND) for ordering food. For that reason, it is possible for customers to pay extra 10% for environmentally friendly packaging (which is about 7 to 10,000 VND).

The result is divided into various parts and there is no remarkable choice. Extremely likely: 32.7% Very likely: 26.9% Somewhat likely: 19.2% Slightly likely: 13.5% Not at all likely (the smallest proportion): 7.7% We can see many opinions whether participants pay extra 10% for environmentally friendly packaging or not. Although young people aware that using food delivery app will harm the

environment, there may have many reasons for their willingness to pay money which was given in the answers of the next and also last question.
