Mindfulness Reflection Mindful eating is an approach that encourages individuals to develop a healthier relationship with food. By focusing on the quality of what we consume, we can improve our overall well-being. This paper explores the concept of mindful eating as discussed by dietitian Jessica Rusch, especially the “eat to live and not live to eat” philosophy and the 80/20 rule. Additionally, it evaluates my personal consumption of empty calories and outlines potential interventions to achieve a better balance between nutrient dense and empty calories. The 80/20 rule suggests that individuals should aim to consume nutritious foods 80% of the time, allowing for flexibility with less nutritious options for the remaining 20%. According to Rusch, empty calories are defined as those that provides little to no nutritional value can contribute to several adverse outcomes when consumed excessively. Reflecting on personal dietary habits, I estimate that approximately 30% of my daily calorie intake comes from empty calories. This includes sugary snacks, processed foods, and beverages like juices. Consuming too many empty calories often leads to symptoms such as energy crashes, craving, and difficulty maintaining a stable mood. These outcomes align with Rusch’s discussion about how excess empty calories can lead to nutrient deficiencies and affect overall health. One of the many reasons for my 30% of empty calories are due to the fact that I am always on the go. I’m a mom of three and I usually snack on things that I know would give me energy to make it through the day. It funny because I am not mindful of the things I consumed but I am very mindful of the things my children consume.
